The Aviation is a classic gin cocktail first created by Hugo Ensslin, head bartender at New York's Hotel Wallick, in the early 1900s. The recipe appeared in his 1916 book Recipes for Mixed Drinks.
A variation of the Gin Sour, the Aviation gets its distinctive pale violet colour from crème de violette. Served chilled in a cocktail glass, it's a lovely choice for a special occasion or cocktail afternoon with residents.
